About the Recipe

Ingredients

  • 2 cup quinoa, rinsed well

  • 3 roma tomatoes, sliced

  • 10 oz spinach, chopped

  • 1/4 cup basil, chiffonade

  • 3 garlic cloves, minced

  • 2 Tbs nutritional yeast, optional

  • 1/2 tsp salt

  • 1/2 tsp black pepper, freshly cracked

Prep


  1. Cook quinoa according to package instructions. Set aside.


Make


  1. In a pan over medium heat, gently water saute tomatoes and spinach until spinach wilts.

  2. Add basil, garlic and seasonings. Stir well. Add mixure to the prepared quinoa and mix well. Adjust for seasoning.
