Ingredients
2 cup quinoa, rinsed well
3 roma tomatoes, sliced
10 oz spinach, chopped
1/4 cup basil, chiffonade
3 garlic cloves, minced
2 Tbs nutritional yeast, optional
1/2 tsp salt
1/2 tsp black pepper, freshly cracked
Preparation
Prep
Cook quinoa according to package instructions. Set aside.
Make
In a pan over medium heat, gently water saute tomatoes and spinach until spinach wilts.
Add basil, garlic and seasonings. Stir well. Add mixure to the prepared quinoa and mix well. Adjust for seasoning.
