Ingredients
·      1.5 cups coconut milk
·      Juice of 2 limes
·      Zest from 2 limes
·      1" piece of ginger, grated or minced
·      1/3 cup maple syrup or agave
·      1/2 cup chia seeds
Preparation
1.    In a blender, combine coconut milk, lime juice, lime zest, ginger, and maple syrup. Blend until smooth.
2.    Pour mixture into a large bowl or container. Stir in chia seeds.
3.    Let sit for 10 minutes, then stir again to prevent clumping.
4.    Refrigerate for at least 4 hours or overnight until thickened.
5.    Spoon into small cups and serve chilled.
