About the Recipe
1 lb kale, chopped
1 cup carrots, matchstick
1/4 cup vinaigrette of choice
1 Tbs sesame oil
1 lime, juiced
1 tsp salt
1/2 cup dried blueberries
Measure ingredients and have a large bowl ready to assemble the salad.
To a large bowl, add kale, salt, lime juice and sesame oil.
Using your hands, thoroughly massage kale under desired tenderness is reached.
Add dressing and carrots to the massaged kale. Proceed with massaging the ingredients.
Add the dried blueberries and gently toss until well distributed.
