Oat Topping Ingredients
1/4 cup rolled oats
1 Tbs shredded coconut
2 Tbs almond flour
1 Tbs coconut oil
salt
1 Tbs coconut sugar
Filling Ingredients
1 cup blueberries, frozen
1 lemon, juiced
1 lemon, zested
1/2 tsp arrowroot powder
1 Tbs maple syrup
Preparation
Oat Topping Directions
In a bowl, combine oats, coconut, coconut sugar, salt and coconut oil until combined and the mixture sticks together. Set aside.
Filling Directions
Prep Preheat oven to 350 degrees F.
Make In a baking dish, add blueberries, lemon juice, lemon zest, maple syrup and arrowroot powder. Stir well. Place the oat filling on top of the blueberry mixture evenly.Bake for 30-35 minutes until the filling starts to bubble and the topping is golden brown.
