About the Recipe


Oat Topping Ingredients

  • 1/4 cup rolled oats

  • 1 Tbs shredded coconut

  • 2 Tbs almond flour

  • 1 Tbs coconut oil

  • salt

  • 1 Tbs coconut sugar

Filling Ingredients

  • 1 cup blueberries, frozen

  • 1 lemon, juiced

  • 1 lemon, zested

  • 1/2 tsp arrowroot powder

  • 1 Tbs maple syrup


Oat Topping Directions

  1. In a bowl, combine oats, coconut, coconut sugar, salt and coconut oil until combined and the mixture sticks together. Set aside.

Filling Directions

Prep Preheat oven to 350 degrees F.

Make In a baking dish, add blueberries, lemon juice, lemon zest, maple syrup and arrowroot powder. Stir well. Place the oat filling on top of the blueberry mixture evenly.Bake for 30-35 minutes until the filling starts to bubble and the topping is golden brown.
