About the Recipe
A satiating noodle salad that is quick and easy.
1/4 cup peanut butter
1 garlic clove
1 Tbs ginger root, peeled
1 Tbs rice vinegar
1 Tbs soy sauce
1 Tbs maple syrup
1 Tbs gochujang
1/4 tsp salt
2 tsp sesame oil
1/4 cup water
4 oz rice noodles or kelp noodles
2 1/2 cup cabbage (red and/or green), shredded
1 red bell pepper, thinly sliced
1 cup carrots, shredded
1 cup edamame
1/3 cup green onion, sliced on bias
Add all the ingredients for the sauce in a blender and blend until smooth and set aside. Adjust for seasoning if necessary.
Dice and shred the veggies and set aside.
Cook the noodles according to the instructions on the package and set aside.Add the noodles and veggies to a large bowl.
Add in the peanut butter sauce and toss well.
Top with green onions and serve.
